So, this post is a REMINDER more than anything else that not only can pizza be fun, it can also be healthy!
I like to get the Pillsbury crust from the refrigerated section of the grocery. It works best if you roll it out on a stone (preferrably) or pan that has been lightly coated with olive oil. Brush olive oil on the top also, and maybe add some crushed garlic. Put it in the oven for 4 minutes, then take it out and put your toppings on, then bake for the remainder. This helps it not to be mushy.
The rest is up to you! Put whatever you want on it. My pizza was very nontraditional, I topped it with
- Pesto instead of red sauce
- Thawed frozen spinach
- Roma tomatoes
- Sauteed onions and red peppers
- Grilled chicken
- Mozzarella cheese and FETA cheese (yum!!)
