Cake Batter Pudding Cookies - Christmas Style

I was looking for something to occupy my time today that would use ingredients I already have, and I stumbled across Nikki (Chef in Training)'s Cake Batter Pudding Cookies.  They looked delish and I already had everything I needed in my pantry... so I thought I'd give them a whirl!  Since we are only ten days away from Christmas, I figured it was only fitting that I use Christmas colored sprinkles :)







Ingredients:
  • 1 1/2 sticks butter
  • 3/4 c brown sugar
  • 1/4 c sugar
  • 1 package instant vanilla pudding mix
  • 3/4 c yellow cake mix
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 1/4 c flour
  • 1/2 tsp salt
  • sprinkles ("jimmies" work well)
Instructions:
  1. Preheat oven to 350 degrees.  Stir together flour, salt, and baking soda and set aside. 
  2. In a large bowl, cream butter and both sugars together.
  3. Add in pudding mix and cake mix, beat until well blended.
  4. Add eggs and vanilla, mix til smooth.
  5. Add flour mixture slowly (don't dump it all in at once.)
  6. Mix in as many sprinkles as you see fit :)
  7. Roll into one-inch balls and place on a baking sheet covered with parchment paper.  Bake at 350 degrees for 10-12 minutes.
  8. Eat and enjoy!!!!!!!
